Pumpkin Spiced Waffles with
Warm Cinnamon Maple Syrup
These waffles and cinnamon maple syrup have a wonderful
aroma when cooking and remind me of autumn. They are
great for the cool fall weather because they are dense and
filling. I usually make them for brunch on the weekends or I
love having them for dinner.
The pumpkin is an excellent source of vitamin A and fiber.
The whole wheat flour supplies protein, fiber and important
vitamins. The oil and walnuts provide heart healthy fat.
Ingredients:
1 1/3 cups Unbleached all-purpose flour
2/3 cups Whole wheat pastry flour or Einkorn flour
2 tsp. Baking powder
1 tsp. Baking soda
1 ½ tsp. Cinnamon
3/4 tsp. Ground ginger
½ tsp. Ground cloves
½ tsp. Salt
2 Eggs, slightly beaten
1 cup Libby’s packed pumpkin
¼ cup Brown sugar, packed
2 – 4 Tbsp. Canola oil
2 Tbsp. Molasses
1 ¼ cups Skim or 1% milk
2/3 cup Raisins (optional)
2/3 cup Walnuts, chopped (optional)
Waffles
1.) Preheat Belgian waffle iron and spray with either nonstick
cooking spray or olive or Canola oil (if nonstick waffle iron).
2.) In a large bowl, sift together flours, baking powder, baking
soda, spices, and salt. Blend ingredients well with a wire whisk.
3.) In a medium bowl, beat eggs together.
4.) Add pumpkin, brown sugar, molasses, Canola oil, and milk to
eggs. Mix well.
5.) Using the back of a wooden spoon, make a well in the center
of the flour mixture. Pour the liquid mixture into the well.
6.) Using a wooden spoon, mix until just blended. Do not over
mix!
7.) Gently fold in the raisins and walnuts, if desire.
8.) Spoon approximately ½ cup of batter onto preheated Belgian
waffle iron and close lid. Most electric waffle irons have an
indicator light which turns off when the waffle is ready; if not, cook
for 3 - 5 minutes or until crisp and golden brown.
9.) Serve hot with warm cinnamon maple syrup or vanilla yogurt.
Cinnamon Maple Syrup
1 cup pure maple syrup
½ tsp. vanilla extract
½ tsp. cinnamon
Combine pure maple syrup, cinnamon and vanilla in small sauce
pan. Heat over medium-low heat for approximately 10 minutes or
until hot, stirring occasionally.
